100% Pinot Noir from the lieu-dit “Les Hautes Bassières”. The grapes are harvested by hand. They are destemmed, then put into vats and left to macerate for three weeks, with daily pigeages. After a long cuvaison, the juice of the pressed grapes is drawn and the marc is pressed. The free-run and press wines are then blended. The wine is aged in barrels of varying origins, ages and degrees of “toasting” for 12 months. The goal is to gain complexity without over-extraction. Blending and bottling is done at the end of September. Enjoy within 4 to 6 years. 13% alcohol.
