Fun facts: This single vineyard expression comes from the lieu-dit “Pierre de Bellevue” in Oeuilly. It is released as a 100% vintage bottling.
Winemaking:
Whole-clusters are gently direct pressed and 20 to 25mg per liter of sulfur are added. The wine ferments spontaneously in Burgundian barrels and does not go through malolactic fermentation. After aging in barrel seven months on its lees, the wine is bottled without dosage.
The bottles age sur lattes for a very long time before release. For example, the 2004 was disgorged after 10 years and six months.
