Champagne, France
Grapes: 50% Chardonnay, 50% Pinot Noir.
Vineyard: Single parcel called Les Crayons, chalk soil
Fun Fact: Cuvée Louis is name for Benoît’s and Melanie’s great-great-great grandfather Louis, who was the first to bottle the family’s estate wines.
Winemaking: Whole-clusters are gently direct pressed. 20- 25mg/L of sulfur added at press. The wine ferments spontaneously in Burgundian barrels and does not go through malolactic fermentation. After aging in barrel eight months on its lees, the wine is bottled without dosage as a base wine or kept as a reserve wine.
The various releases of Cuvée Louis over the years have varied greatly in their composition of base and reserve wines as well as their time sur latte(stacked on their sides).
