Fun Facts: The grapes come from two parcels. The first is a 2.5 hectare plot called Champagne that was planted in 1995 and the second is a 1.2 hectare parcel planted in 1998. Both are in the village of Chitry-le-Fort. Both Vineyards have about 25cm of topsoil before hitting right on a mother rock of Kimmeridgian Limestone.

Winemaking: Fermentation and aging can occur in different vessels each vintage depending on the global quantities. For this wine, 228l barrels and 2500l foudres are usually used along with the enamel lined tanks in generous vintages. Long alcoholic and malolactic fermentation in old oak barrels. Aged 11 months on the lees without racking or cold stabilization.
