Cola drinks have been around since the 19th century. Beers sour with Lactobacillus and flavored with spices a lot longer than that. The fact that no one had put the two together baffled them when they started toying with the idea. Then they figured that making it work might be the issue. They started blending spices, looking up old botanical cola recipes, extracting flavors, doing some more blending, adding spices, taking spices away, playing with fruit combos.
