Dolcetto d’Alba DOC, Piemonte, Italy
Grapes: Dolcetto, 25 year old vines
Soil Composition: Clay, Limestone
Winemaking: The grapes are destemmed and macerated for two weeks. Fermentation is in stainless steel and aging is in homemade stoneware and/or fiberglass for six months. 10-25mg per liter of sulfur added at bottling.
