Winemaking:Â Classic white vinification under controlled temperature is followed after a short pre-fermentation cold soak. Terroir driven approach in order to express its unique character. Maturation with the gross lees for 2 years in a stainless steel tank. A period of cellaring adds more complexity and layers to this textbook Santorini.
Description: Bright apricot nose on wet gravel and flinty minerality. Seaweed, pink grapefruit on a juicy background. Impressively elegant mouthfeel with a briny tang flow and complex sea breeze flavors. Lemon meringue pie, roasted cashew, and a touch of tannic grip. Gorgeous sunny, salty, and a crystalline endless finish.
