VINEYARD: Meyer Vineyard. Perched atop the Dundee Hills, the Meyer vineyard has been certified organic by Oregon Tilth for 10+ years. Planted east to west, these Riesling vines are entrenched deep into the Jory soil and have been a component in Ovum wines since 2014.
VINIFICATION: Hand harvested on October 5th, then whole cluster pressed. The unsulfured juice was racked into a 10HL Austrian cask, and two Acacia barrels where it would naturally ferment and rest on lees for 1 year. During this time, John and Ksenija used their knowledge of sherry to help promote the development of aldehydic compounds commonly found in manzanilla. No fining or filtration, bottled in ceramic to protect from light and to promote aging. Unfined, unfiltered.
