VARIETAL: Pinot Noir
VINEYARD(S): Rancho Solo Vineyard
ON ELEVAGE: 100% new French oak on fine lees. 16 months.
ON FERMENTATION: Native with one punch down and one pump-over per day. Fermented in tank for four weeks at 70°F. Pressed to barrel before the end of fermentation for better wood integration.
ALCOHOL %: 13.4
TASTING NOTES: Fresh black pepper, cranberries, and red currant.
ON PRODUCTION: Pinot is harvested at 23.1 brix. 30% whole-cluster. Grapes were cold soaked for 6 days with one pump-over per day.
ON THE NAME: The name Squire is a nod to the nobility of Pinot, and an acknowledgement of the rural nature of the Central Coast.
