Illahe Vineyards’ “Capitol Fizz” is a sparkling wine made with a blend of Chardonnay, Pinot Gris, Viognier, Grüner Veltliner, Tempranillo, and Pinot Noir grapes grown in the shallow sedimentary clay soils of Illahe Vineyards in the Willamette Valley AVA. This wine was fermented in 100% stainless steel tanks and carbonated in the tank. With a pH of 3.15 and a titratable acidity of 6.8 g/L, this dry, pink bubbly has lively acidity that is balanced by a residual sugar content of 4.0g/L. Capitol Fizz has an alcohol content of 11.5%. Only 1,848 cases were produced of this unique and refreshing sparkling wine. The grapes used in the making of this wine were grown at an elevation of 250-450ft.
